Eating healthy should not be so complicated and tired when you are having a busy day and all you want is to satisfy your hunger, your appetite for food.

I want to share a little bit about me. My experience in cooking is about 35 years ago. My first time I remember I cooked something was a fried egg with beans. My mom gave me some directions to follow in order to not burn the ingredients or get myself burn.

I was five years old when I ate my first dish of fried eggs and beans cooked by me, since that day I felt in love with cooking. Back then in my little village in Mexico most vegetables were so fresh, picked early in the morning to sell them at the local markets. For me buying local was an enjoyable adventure during my childhood.

I missed so much those beautiful days in my village. Moving to United States was hard, and my cooking skills with this new adventure were so useful for working in the restaurant industry. I have improved my skills working with other cooks and I keep learning different cooking techniques to create new recipes. I have never taken any culinary courses or gone to school to be a “chef” I don’t like to be called that way.

Reading books about cooking and working for many restaurants helped me to become a better cook. I’ve been creating dishes from seafood, to poultry, to vegan, breaking in each step the rules for cooking written by culinary chefs.

The vegan red potatoes is a recipe so simple and delicious that every person can cook it. I am vegan but I will never stop cooking with animal ingredients. Cooking is my passion.

Ingredients

  •    3 Red potatoes  

  •    3 small Sweet Peppers 

  •    1 bunch Green onions

  •    3 Roma tomatoes or any red tomato

  •    1 oz fluid olive oil

  •    1 Tbls Chopped Garlic

  •    1 tsp Ground Paprika

  •    2 oz Chopped kale

  •    1 tsp Salt

  •    1 tsp Black pepper

Directions

  • Step 1

    Cut the red potatoes in small pieces. Add the oil in a medium pan, transfer the potatoes here when the oil is getting hot. Cook the potatoes until they are soft. Add paprika, garlic, salt and black pepper. Keep the fire in low temperature.

  • Step 2

    While the potatoes are getting cook, Cut the rest of vegetables in small pieces and add them to the hot pan. Cook all mixed vegetables for about five minutes or until they are soft tender.

  • Step 3

    When the mixture is all cooked serve it in your favorite plate and garnish it with raw chopped kale.

     

    Is optional to cook the kale. Salt and pepper is up to your taste. Also you can add roasted salmon on top of the dish. Enjoy it.
