 Cooking vegan food is a challenge for many people who like to eat healthy delicious meals. I personally think that cooking should be easy and fun.

Some vegan recipes are so complicated to prepare for the number of ingredients they use, tedious process in steps, and time-consuming for cooking. The vegan taco omelette is an easy and tasty recipe to make at home, might be a challenge for many, but it’s fun to try. 

I have tasted other recipes that are very similar to this one and they are great too. I believe my vegan taco omelette is amazing because I bake it to enhance the rich flavor of the vegetables blended with the Mexican salsa and the aromas of the spices.

Next time you want to cook a tasteful breakfast for your friends or family use this recipe and impress them with your cooking skills in the kitchen. Use the best vegetables you like to eat, sauteed, or roast to stuff the omelette. The salsa can be different than my recipe if you want to add real cheese instead of vegan cheese is up to you.  The reason I prefer using Kala namak salt is to give the egg flavor to the omellete, this ingredient makes a huge impact on the taste, try not to omit it.

Keep in mind that you need to be creative in presenting the final dish to your friends.

Ingredients

2 cup chickpea flour 

2 teaspoon kala namak salt

1 teaspoon turmeric 

1 teaspoon black pepper 

1 teaspoon cumin

1 teaspoon nutritional yeast 

1 cup almond milk 

1 cup water

 

Directions

  • Step 1

    Mix all ingredients for making the batter of the eggless texture. Add the liquids to the last.

  • Step 2

    Set a pan with oil on the stove, when is warm hot add the mixture to form a tortilla, cook it for three minutes on both sides.

  • Step 3

    After the tortilla gets a golden-brown color, stuff it with your favorite roasted vegetables, salsa, and cheese.

  • Step 4

    Place the stuffed omelette into the oven at 370 F hot temperature for ten minutes

  • Step 5

    When the omelette is done, place it on a plate serve it with your favorite potatoes and  garnish it using your creativity

Notes

The best way to try the tortilla flavor is after is cooked it, when you try the uncooked butter mixture you won’t like it, it has a raw strong taste.
