Tasty Salomon Panini
This delicious, crispy panini is a superstar, with cajun seasoning , sun-dried tomatoes, and avocado.

This crispy panini is a lunch superstar, thanks to cajun seasoning on the salmon, sun-dried tomatoes, and fresh herbs.
Ingredients
8 oz fresh fillet salmon
½ cup shredded mozzarella cheese or two slices
1 tablespoon reduced fat mayonnaise
4 jarred sun-dried tomatoes in oil, drained and finely chopped
2 oz fresh basil chopped
½ teaspoon dried oregano
½ cup arugula or baby spinach
½ Avocado slices
1 oz red pepper slices
1 Tbls chopped garlic
2 Tbls cajun seasoning
2 slices country-style white bread (or your favorite bread)
vegetable oil cooking spray
Directions
Step 1
In a small bowl, mix together the salmon, 1 tsp oil and cajun seasoning. Set a pan in low flame and cook the salmon on it.
Step 2
Place the mayo, basil, sundried tomatoes, garlic, oregano, red peppers and spinach on one slice of bread and top with the cooked salmon . Place the avocado and cheese on top of the salmon, add the remaining bread slice on top to form a sandwich.
Step 3
Spray the top of the sandwich with vegetable oil cooking spray.
Step 4
Place in a pre-heated panini press for 3 to 4 minutes until golden brown (the sandwich can also be cooked in a non-stick skillet sprayed with vegetable oil cooking spray). Cool for 5 minutes.
Step 5
Cut the sandwich in half and serve.
Notes
If salmon is not your option, use chicken or sword fish. This tasty sandwich is one of my favorites in summer time, I like to eat it with a side of wild hash potatoes.
